Ener-G Pure Tapioca Flour
Our top-selling gluten-free flour is made of 100% pure tapioca starch. Tapioca is the root starch of the cassava or yuca plant. It's a great thickener for pie fillings, soups, stews, and sauces - as it thickens quickly at low temperatures. Tapioca Flour is popular for gluten-free baking, hence the term "flour", as it is a fluffy white flour that creates a chewy texture. This flour, as with most gluten-free flours, is typically best when used combined with other gluten-free flours.
STORAGE: This is a dry product and does not require refrigeration or freezing. Opened or unopened, this product should be stored in a cool, dry area and has a 3-year shelf life from the production date.
USE BY DATE: The expiration date is embedded on the top of every box and is read as Month Day Year (e.g.: 010110 means the product will expire on January 1st, 2010).

The product is excellent. However, the packaging was recently changed--new box design: The glue on top and bottom flaps makes it difficult to open the box, and the perforated tear strip on top no longer works; we have to cut open the box. Plastic bag holding product is sometimes not sealed, which makes product vulnerable to contamination. After order confirmation, there is never any communication prior to delivery, even when we send inquiries on order status. This leaves us guessing and assuming orders will eventually arrive.
