Pea Hummus Rice Toast
This recipe is great for a bright and crunchy meal or a weekday snack.
4 Slices Ener G White Rice Loaf
1 c. Frozen Peas
1/4 c. Sesame Tahini or Sunflower Butter
1/2 tsp. Lemon Juice
4 Radishes - Thinly Sliced
1/4 c. Broccoli Sprouts
1 tsp. Lemon Zest
1/2 tsp. Red Pepper Flakes
4 tsp. Parmesan Shreds (Plant-Based to make this Vegan)
Salt & Pepper to taste
In a small bowl, microwave the peas, covered, for one minute and thirty seconds.
Uncover the peas and allow them to cool for two to three minutes.
Add the tahini or sunflower butter, salt and pepper, and the lemon juice to the peas, and smash with a fork until the ingredients are well combined.
Toast the rice loaf slices in the toaster or toaster oven.
Layer a quarter of the pea hummus on each piece of rice loaf.
Top each loaf slice with a quarter of the radish slices, broccoli sprouts, parmesan, pepper flakes, and sprinkle with lemon zest before serving.
