Stuffed French Toast

Decadent and completely customizable based on your favorite berries in season. We used organic blueberries and blueberry jam.
Ingredients

1 1/2 cups vanilla almond milk

3 tbsp. Ener-G Egg Replacer

1 tbsp. maple syrup

4 slices Ener-G Gluten-Free Texas Toast

2 Tablespoons Vegan margarine

1/2 cup vegan cream cheese

1 Tablespoon berry jam

1 Tablespoon fresh berries
Filling
Directions
In a medium mixing bowl, combine almond milk, Ener-G Egg Replacer, and maple syrup. Whisk to combine.
In a small mixing bowl, combine softened vegan cream cheese, berry jam, and fresh berries, mashing the fresh fruit to incorporate.
Spread half of the berry cream cheese mixture on one slice of Ener-G GF Texas Toast. Top the mixture with another slice of Ener-G GF Texas Toast to make a sandwich. Repeat with the remaining berry cream cheese and Ener-G GF Texas Toast slices.
In a medium skillet over medium heat, melt 1 Tablespoon of vegan margarine. Coat the bottom of skillet.
Whisk the almond milk mixture to ensure there are no lumps. Submerge the stuffed Ener-G GF Texas Toast into the batter, let absorb the mixture for 25-35 seconds on both sides.
Immediately place Ener-G GF Texas Toast in the buttered skillet on the stove. Cook 5-7 minutes and carefully check for golden brown color on the underside. If browned, gently flip with a spatula to cook the other side 5-7 minutes until golden brown.
Remove the cooked stuffed french toast from the skillet and place on a board. Repeat the process with the second portion. To serve slice stuffed french toast diagonally to reveal the berry cream cheese filling. Transfer to a plate and add a dusting of powdered sugar, maple syrup, plant-based sweetened condensed milk or coconut whipped cream. Garnish with fresh berries and enjoy!
