Ingredients: Filtered Water, Rice Flour, Tapioca Starch, High Oleic Safflower Oil, Pear Juice Concentrate, Bamboo Fiber, Yeast, Methylcellulose, Guar Gum, Orange Citrus Fiber, Salt, Calcium Phosphate, Baking Powder (Glucono Delta-Lactone, Calcium Carbonate & Magnesium Carbonate). I was diagnosed in 1976 at age 25 with celiac and was almost dead due to malabsorption and failing organs. I checked myself into a hospital where a surgeon from my childhood worked, and the allergist asked me about my life. When I described it, he put both his hands over his face and lowered his head and said, try a life without gluten. Although it took me about 3 years to recover, going off the belladonna pain killer early at 6 weeks and eating tiny bites of food gradually increasing the portions, it was a miracle. I had had symptoms of constant headache, inability to sleep with tossing with the covers torn from the bed, irritability, failure to thrive on all my physicals, such arthritic pain that I would be crying when I tried to get out of bed in the morning. My yoga teacher at one point said she had never seen someone so young have such arthritis symptoms and recommended a white flour and white sugar elimination diet whereby I made some improvement, but did not make the connection of celiac disease. All this leads me to the fact that I have never eaten any other bread than Ener-G from that time to the present. I am so sensitive I cannot eat brown rice or whole grain corn products. I cannot eat millet and some of the other foods (cassava) that have been considered "gluten-free." Thank you, Ener-G, for having a bread truly meant for celiacs. I do notice a slight change in the taste that someone mentioned was due to a change in the baking powder, and I also wonder why 2 people who rave about the product only gave it 1 star! You might want to check that out! I highly recommend this bread, and now that my 9-year-old grandson has celiac, he loves the thin-sliced bread so he can have sandwiches. THANK YOU, Ener-G, and may you be around for a long time. By the time someone asked me, had I had the biopsy, I had been gluten-free and told that person I was told never to eat gluten again. Don't be buffaloed even if someone says you are just following a fad. You know if you almost died, and just stick with diet and ignore or try to inform the ignorant. Thanks for listening.

Good texture, okay flavor, and it beats making it myself because I tend to make hockey pucks.
