NO FRY Chicken Parmesan

Oven Baked Savory Tender Chicken


4 ea Boneless, Skinless Chicken Breast Halves
2 cup Tomatoe sauce (Homemade or store bought)
1 cup shredded mozzarella cheese
1 cup Ener-G Plain Dry Breadcrumbs Seasoned (See recipe for seasoned breadcrumbs)
2 ea eggs


Preheat oven to 400°.
Place seasoned bread crumbs in a shallow dish. In a separate shallow dish, beat eggs. Dip chicken in egg, then in crumb mixture, turn to coat other side. Arrange chicken in a 13x9 inch glass baking dish. Bake 20 minutes. Remove from oven and add tomatoe sauce over each individual chicken breast. Put any remaining sauce around chicken. Top each chicken breast with shredded Mozzarella Cheese. Return to oven for an additional 10 minutes or until chicken is thoroughly cooked.
