

French Toast with Berry Chia Sauce

Time to dress up your french toast and make breakfast extra special!

Ingredients

2 cups Fresh Berries

1 tbsp Maple Syrup

2 tbsp Chia Seeds
-
2 Egg (or Ener-G Egg Replacer)

¼ cup Unsweetened Almond Milk
-
4 slices of Ener-G Texas Toast Loaf
-
1 tbsp Extra Virgin Olive Oil
Directions
Combine the berries, maple syrup and chia seeds in a saucepan over medium heat. Bring to a low simmer and cook for 10 to 15 minutes or until it begins to thicken to a jam-like texture. Set aside.
Meanwhile, whisk together the egg and milk in a shallow bowl. Dip the bread into the mixture, coating both sides evenly.
Heat the oil on a nonstick griddle or skillet over medium heat. Cook the bread slices for about 3 to 5 minutes per side, or until browned.
Divide the french toast onto plates and top with the berry chia sauce. Enjoy!
Recipe Note
Leftovers:
Store the bread and jam separately. Refrigerate the french toast up for up to five days, and the chia berry sauce up to seven days. Freeze if longer.
More Flavor:
Add lemon juice, vanilla extract and/or cinnamon to the berry sauce.
Nut-Free:
Use unsweetened oat, rice, coconut or soy milk instead of almond milk.
Additional Toppings:
Cottage cheese, whipped coconut cream, yogurt, hemp seeds or nuts.
