Cream of Mushroom Soup
|1||ea||yellow onions (sliced)|
|4||tbsp||Ener-G Potato Mix|
|3||cup||Half & Half|
|1||tbsp||brown sugar (optional)|
|1||cup||yogurt or Cream Fraiche|
Saute the onions over medium heat in a large wok in the 4 tablespoons of oil until tender. Add mushrooms and continue to saute for 5 minutes. Stir in Ener-G Potato Mix. Saute another 2 minutes. Add remaining ingredients except yogurt. Stir over medium heat until thickened. Remove and let cool. Whip in an electric blender until smooth. Pour back into wok and heat. Stir in yogurt. Serve warm.
