Ener-G Corn Mix Coated Potato Puffs

|6||ea||bacon slices (cooked)|
|1||cup||Ener-G Corn Mix|
|ea||sour cream or tartar sauce|
|ea||oil for frying|
Mix first 3 ingredients plus Ener-G Corn Mix into cream. Pour 2 inches of frying oil into a deep skillet or wok and heat to 350 degrees F. Drop tablespoons of cream mixture into hot oil and allow them to brown. Remove potato puffs with slotted spoon. Serve warm with sour cream or tartar sauce.
Use with Mashed Potatoes recipe.
*If you wish to avoid eggs whip 4 teaspoons, packed Ener-G Egg Replacer with 1/2 cup milk, 1-teaspoon baking soda.
