Blackberry Mint Rolls
This recipe makes a delicious addition to any breakfast or brunch.
4 Ener-G Gluten Free Dinner Rolls
1 c. Fresh Blackberries
1/4 c. Fresh Mint Leaves (Sliced)
1 Tbsp. Sugar
1 tsp. Vanilla Extract
In a medium sized saucepan, over medium heat, cook the blackberries, sugar, vanilla, and mint, stirring often, for about ten minutes, until the sauce has thickened and the berries have broken down.
Toast the dinner rolls in the toaster oven, then let them cool, and slice them in half.
Spoon one quarter of the berry mixture onto each toasted roll.
