This is a quick and delicious snack to put together for breakfast or lunch.
4 Slices Ener-G White Rice Loaf
1 c. Cherry Tomatoes
1 Tbsp. Olive Oil
1 Clove Garlic - Minced
1 tsp. Lemon Zest
Salt & Pepper to Taste
In a small pan, over medium heat, cook the cherry tomatoes with the olive oil, garlic, salt, & pepper for about ten minutes, stirring often.
Remove the tomatoes from the heat & set aside.
Toast the rice loaf slices in the toaster or toaster oven.
Slice the avocado, and layer a quarter of the slices on each piece of rice loaf.
Top each loaf slice with a quarter of the cherry tomatoes, and sprinkle with lemon zest before serving.
