Corn Muffin

Sweet Corn Muffins


4 oz Large Eggs
4 tsp vanilla (Powder or Liquid)
6 tbsp Vegetable Oil
3 cup milk
3 pinch salt
4 1⁄3 cup Ener-G Corn Mix
4 tsp baking powder
4 tbsp White sugar or (Evaporated Cane Juice)


Preheat Oven to 375º.

Directions: In a mixing bowl beat eggs well. Slowly add the following ingredients one at a time and mixing in between each: sugar, vanilla and vegetable oil. Continue mixing. In a separate bowl, mix together the Corn Mix, salt and baking powder and set aside. Add the milk to the egg mixture. Slowly add the dry ingredients to the egg mixture and mix well for 1 to 2 minutes. Fill baking cups to top for a large muffin or ¾ for a smaller muffin. Reduce oven to 350º and bake for 13-15 minutes. Remove from oven and enjoy!
