Ener-G Egg Replacer Omelet Cake

| 1 1⁄2 | tbsp | Shortening |
| 1 1⁄2 | cup | Ener-G White Rice Flour |
| 2 | tsp | baking powder |
| 1 | tsp | baking soda |
| 1⁄4 | tsp | salt |
| 1 | cup | Buttermilk (You can use Dairy Substitute) |
| 3⁄4 | cup | sharp cheese grated ( You can use Dairy Free Cheese) |
| 1⁄2 | cup | onions (chopped) |
| 3⁄4 | cup | bell pepper (chopped) |
Preheat oven to 360 degrees F. (182 degrees C). Mix Ener-G White Rice Flour, shortening, Ener-G Egg Replacer, buttermilk, baking powder, baking soda, and salt together. Add remaining ingredients. Mix 1 minute at medium speed. Pour into one 8inch (20cm) diameter, greased pan. Bake 25 to 30 minutes. Cool before cutting.
