Ener-G Egg Replacer Soft Molasses Cookies
| 2 | cup | all-purpose flour (plus 2 tbsp) |
| 1 | tsp | ground ginger |
| 1 | tsp | cinnamon |
| 1⁄4 | tsp | salt (optional) |
| 2 | tsp | baking soda |
| 1 | tsp | Ener-G Egg Replacer |
| 1⁄2 | cup | Soft shortening |
| 1⁄2 | cup | granulated sugar |
| 1⁄2 | cup | Molasses |
| 6 | tbsp | water |
| 1⁄2 | cup | Raisins |
Preheat oven to 325 degrees F. (163 degrees C) Sift flour, spices, salt and baking soda together. In another bowl cream together shortening, sugar, molasses and Ener-G Egg Replacer. Alternately stir flour mixture into shortening mixture. Stir in water and raisins. Drop by tablespoon 2 inches apart onto greased cookie sheet. Bake for 15 minutes.
