Ener-G Egg Replacer Lemon Shortbread Cake
| 10 | oz | All purpos Flour |
| 3 | tsp | baking powder |
| 1⁄2 | tsp | salt (optional) |
| 4 | oz | Soft Margarine |
| 6 | oz | brown sugar |
| 2 | tsp | Lemon peel (diced) |
| 2 | tsp | Ener-G Egg Replacer |
| 4 | tbsp | Lemon Juice |
| 4 | tbsp | water |
Preheat oven to 375 degrees F (191 degrees C) Sift flour, baking powder and salt together. Beat in margarine, sugar, and lemon peel, Ener-G Egg Replacer and lemon juice. Add water and beat for 3 minutes. Pour into 2 greased 8inch (20cm) diameter pans. Bake for 30 to 40 minutes. Let cool. If desired, top with strawberries, other fruit or brown sugar sprinkled with lemon juice. Do not let batter sit before using. Let batter sit before using will decrease volume.
