Ener-G White Rice Flour Tapioca Pancakes

| 1 1⁄2 | tsp | baking soda |
| 1 | tsp | baking powder |
| 1⁄4 | cup | Ener-G Tapioca Flour |
| 3⁄4 | cup | Ener-G White Rice Flour |
| 1 | tbsp | oil |
| 1 | cup | Buttermilk |
Beat egg in small bowl. Sift together baking soda, baking powder and Ener-G Tapioca Flour, and Ener-G White Rice Flour. Mix in remaining ingredients. Let sit 5 minutes. Fry on 375 degree F. Skillet until done. Flip only once.
For Egg-Free Version: If using Ener-G Egg Replacer whip together 3/4 cup buttermilk, 1 teaspoon baking powder, 1-1/2 teaspoons baking soda and 1 teaspoon Egg Replacer. Add the rest of the ingredients. Mix well. Fry at medium-high temperature.
For Low-Protein Version: To lower protein use Ener-G Egg Replacer, ¾ cup water and 1-teaspoon lemon juice to eliminate the buttermilk and eggs. This recipe still contains rice flour so it may not be low enough in protein for you. Ask your medical doctor or Dietitian for advice.
