Ener-G Potato Starch Coffee Cake
| 1 | cup | Ener-G White Rice Flour |
| 1⁄4 | cup | Ener-G Potato Starch Flour |
| 2 | tsp | baking powder |
| 3⁄4 | cup | sugar |
| 1 | ea | egg (whipped) |
| 1⁄2 | cup | milk |
| 1⁄2 | tsp | vanilla |
| 2 | tbsp | Melted Butter |
Preheat oven to 350 degrees F. Mix Ener-G White Rice Flour, Ener-G Potato Starch Flour, baking powder and sugar together. Set aside. Whip egg. Add milk, vanilla and melted butter to egg. Mix briefly. Add dry ingredients. Mix thoroughly. Place in greased 8inch by 8inch by 1-3/4inch pan. Bake for 245 to 30 minutes or until firm on top when touched. For variety you may sprinkle this cake with brown sugar and/or fruit before baking.
This recipe will not work with Ener-G Egg Replacer.
