Ener-G Rice Bran Cake
| 2 | ea | Large Eggs |
| 1 | cup | milk |
| 1 | tsp | vanilla |
| 2 | tbsp | Olive oil (You can use melted Butter) |
| 1 1⁄4 | cup | Ener-G White Rice Flour |
| 1⁄2 | cup | Ener-G Rice Bran |
| 1⁄2 | cup | sugar |
| 3 | tsp | baking powder |
| 1⁄2 | tsp | salt |
| 1 | pinch | cinnamon (or Spice of choice) |
Preheat oven to 350 degrees F. In a medium bowl, whip eggs, milk, and vanilla until frothy. Stir in sugar. Mix in oil at medium speed for 10 seconds. In a mixing bowl, combine White Rice Flour, rice bran, baking powder, salt and cinnamon together. Add egg-milk mixture and blend well. Pour batter into a lightly greased 8 inch cake pan and bake for 35 to 38 minutes or until center is firm to the touch. Let cool on wire rack
