Ener-G Potato Mix Spice Cake
| 2 | cup | Ener-G Potato Mix |
| 3⁄4 | tsp | baking soda |
| 3⁄4 | tsp | Ground Cloves |
| 3⁄4 | tsp | Ground Cinnamon |
| 3⁄4 | tsp | Allspice |
| 1⁄2 | cup | Shortening |
| 3⁄4 | cup | brown sugar (packed) |
| 1⁄4 | cup | granulated sugar |
| 4 | ea | Large Eggs |
| 1 | cup | Buttermilk |
| 1 | tsp | vanilla |
Preheat oven to 375 degrees F. Mix Potato Mix, Baking soda and spices together. Set-aside. Cream shortening and sugar together. Mix remaining ingredients into shortening mixture. Stir in Potato Mix mixture. Bake in two greased 8inch diameter cake pans for 35 minutes. Let cool slightly before tapping out onto wire rack to finish cooling. If you wish to eliminate eggs use Ener-G Egg Replacer. If using Ener-G Egg Replacer add 1/4 cup lecithin to this recipe. Lecithin is available at most health food stores. You may also use 3/4 cup water and eliminate the buttermilk.
