Ener-G Peanut Butter Cookies
| 1⁄2 | cup | margarine (Diary Free) |
| 1⁄4 | cup | Honey |
| 1⁄2 | cup | brown sugar (Packed) |
| 1⁄2 | cup | peanut butter |
| 1 | ea | egg |
| 1⁄2 | tsp | baking powder |
| 3⁄4 | tsp | baking soda |
| 1 1⁄4 | cup | Ener-G Brown Rice Flour |
Preheat oven to 375 degrees F. Beat the first 5 ingredients (margarine through egg) together until fluffy. Mix Brown Rice Flour, baking powder, and baking soda together in a separate bowl. Combine thoroughly flour mixture with peanut butter mix. Chill the dough for one hour. Shape the chilled dough into small balls and arrange on a lightly greased baking sheet about 3 inches apart. Dip a fork in the Brown Rice Flour and press it first one way and then the other to flatten the cookies and make a crisscross design. Bake 10 to 12 minutes.
