|1||cup||Buttermilk (You can use orange juice concentrate)|
|1 1⁄2||tsp||Baking Soda|
|2||tbsp||sugar or fruit juice concentrate|
|2||cup||Ener-G Rice Mix|
Preheat oven to 350 degrees F. Beat egg yolks. Mix buttermilk, oil, baking soda, baking powder and sugar into beaten egg yolks. Add Ener-G Rice Mix and stir until smooth. Beat egg whites. Gently fold in egg whites until batter is mixed. Pour into 7-7/8 inch by 3-7/8-inch by 2-1/8-inch greased bread pan. Bake for 45 minutes until brown. Turn out onto wire rack to cool.
