Quick Bread
| 2 | ea | eggs |
| 1 | cup | Buttermilk (You can use orange juice concentrate) |
| 2 | tbsp | Vegetable Oil |
| 1 1⁄2 | tsp | Baking Soda |
| 1⁄2 | tsp | baking powder |
| 2 | tbsp | sugar or fruit juice concentrate |
| 2 | cup | Ener-G Rice Mix |
Preheat oven to 350 degrees F. Beat egg yolks. Mix buttermilk, oil, baking soda, baking powder and sugar into beaten egg yolks. Add Ener-G Rice Mix and stir until smooth. Beat egg whites. Gently fold in egg whites until batter is mixed. Pour into 7-7/8 inch by 3-7/8-inch by 2-1/8-inch greased bread pan. Bake for 45 minutes until brown. Turn out onto wire rack to cool.
