New "Double Kick" Ener-G Baking Powder and Soda

Originally, Ener-G Baking Powder and Ener-G Baking Soda were single acting. This became a problem as most commercial baking powders and baking sodas found in stores are double acting. Traditional baking powders and baking sodas have two stages of release: first, a "kick" of carbon dioxide at room temperature when water is combined to it. The second, more powerful "kick" occurs at oven temperatures. Most of the carbon dioxide in typical double acting baking powders and baking sodas are released in the oven. This results in better volumne.

Ener-G's original single acting Baking Powder and Baking Soda, once combined with water, would essentially release all of its carbon dioxide at room temperature. Therefore, customers had to immediately place the batter into the oven in fear there would not be enough energy to rise while being heated. Our newly formulated Baking Powder and Baking Soda releases much of its carbon dioxide in the oven making it comparable to typical double acting baking powders and baking sodas found in stores.

Ener-G Baking Powder and Baking Soda Recommendations:

  1. Twice as much Ener-G Baking Powder and Ener-G Baking Soda must be used in place of regular baking power/baking soda. The reason is because Ener-G Baking Powder and Baking Soda only releases half the amount of carbon dioxide gases as regular baking powders and baking sodas.
  2. There are three major sources of carbon dioxide used in baking powder and baking soda. The most common being sodium bicarbonate, next potassium bicarbonate, and then calcium carbonate. Individuals on Kidney Dialysis or just looking for a healthier alternative to sodium bicarbonate and potassium bicarbonate can use our improved versions, as they now perform similar to sodium bicarbonate baking powders and baking sodas, except twice as much must be used.
