Spring Recipes
As flowers start to bloom and
spring emerges, it’s a great time to start planning outdoor gatherings and good food for all to enjoy. Use these delicious menus for your next function.

Pasta Shell Salad
1 Pkg Ener-G White Rice Small Shells
4 garlic cloves
1 cup vegetable oil
1/4 cup lemon juice
1 cup shrimp
1 cup sliced olives
4 medium tomatoes, cut into small wedges
1 green pepper, diced
Any desired toppings/vegetables (green peas, hard boiled eggs, radishes, etc.)
Cook Ener-G Gluten-Free Shells according to directions below. Drain. Spear garlic cloves with toothpicks. Stir oil and lemon juice together. Add Ener-G
Small Shells and mix well. Bury speared garlic cloves in mixture and refrigerate overnight. Remove garlic cloves. Mix in remaining ingredients. Serve.
Mayonnaise may be mixed in if desired.Add 8 ounces (1/2 carton of Ener-G Small Shells to 2-3/4 quarts of rapidly boiling water to which 1 tablespoon salt
has been added. Boil uncovered, stirring occasionally for 10 to 15 minutes or until tender, but still firm. Drain and rinse with warm water.
Hawaiian Ham Slice
One 3/4-inch thick center cut ham (about 1-1/2 lb)
1 tbsp water
2 tsp Ener-G Potato Starch Flour
1 (8oz) can crushed pineapple in juice, drained
1/2 cup lite syrup
1 tbsp vinegar
2 tsp prepared mustard
Trim and discard fat from edges of ham. Place ham in 11x7-inch glass baking dish or 1-1/2 qt shallow casserole dish; cover with wax paper. Microwave at
High for 4 to 5 minutes or until heated through, rotating dish after 3 minutes. Let stand covered while preparing sauce.Combine water and potato starch in
small microwaveable bowl; mix until smooth. Add remaining ingredients and mix well. Microwave at High 4 to 5 minutes or until thickened, stirring after 3
minutes. Drain liquid from ham. Spoon about 1/2 cup sauce over ham; serve with remaining sauce on the side. Makes 4 to 6 servings.
Gluten Free Marble Cake
1-1/2 cups Gluten-Free Gourmet Blend
2 tsp Ener-G Baking Powder
1/4 tsp salt
3/4 cup sugar
1/2 cup butter, softened
2 eggs
2 tsp gluten-free vanilla
2/3 cup milk
2 tbsp sugar
2 tbsp unsweetened cocoa
2 tbsp water
Frosting:
1/4 cup butter, softened
1-1/2 cups powdered sugar
1/3 cup unsweetened cocoa
1/2 tsp gluten-free vanilla
2 to 3 tbsp milk
Heat oven to 350 F. Grease and flour 8-inch square baking pan. Set aside.
Stir together Gourmet Blend, Baking Powder, and salt in large bowl. Set aside.
Beat 3/4 cup sugar and 1/2 cup butter in a large bowl at medium speed, scraping bowl often, until creamy. Add eggs, one at a time, beating well after each
addition. Stir vanilla. Reduce speed to low. Add Gourmet Blend alternately with milk, beating well after each addition.Place 1 cup batter into a small
bowl. Add remaining 2 tbsp sugar, 2 tbsp cocoa and water; stir until well mixed.
Spoon 3/4 plain batter in bottom of prepared pan. Spoon chocolate batter
over plain batter. Spoon remaining plain batter on top, allowing some of the chocolate batter to show through. Swirl two batters together gently with knife
or spatula for marbled effect.Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool completely.
Beat 1/4 cup butter in medium
bowl at medium speed until creamy. Gradually beat in powdered sugar, 1/3 cup cocoa, vanilla and enough milk for desired consistency. Frost cooled cake.
Yield: 9 servings

Mother and Father's Day Recipes
Who doesn’t love breakfast,
especially if its crammed full things that are sweet and savory. Show the parents your appreciation with this versatile confectionery treat. Try some of
these ideas or get creative and come up with your own!
Basic Crêpes
Ingredients:
2/3 cup Gluten-Free Gourmet Blend
1/2 tsp salt
3 eggs
1 1/2 cups dairy free liquid or milk
2 tbsp nondairy margarine or butter, melted
Directions:
In a large mixing bowl, whisk together the flour, salt and eggs. Gradually add in the milk and the melted butter stirring to combine. Beat until smooth.
Refrigerate batter for 1 to 2 hours. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using
approximately 1/4 cup for each crêpe. Tilt the pan with a circular motion so that the batter coats the surface evenly. Cook the crêpe for about
2 minutes, until the bottom is light brown and the edges start to curl. Loosen with a spatula, turn and slightly cook the other side. Serve hot. Makes a
dozen small crêpes and about 8 larger.
Sweet Fillings
Fill your crêpes with delicious fruits such as bananas, berries, apples, pears or even try a dessert version filled with chocolate or vanilla
pudding, cream, or your favorite jam. Crêpes are a fun and versative breakfast, brunch, snack, or dessert that can take many forms.
Savory Fillings
Crêpes are not just for the sweet tooth, these can also take the form of a delicious meal. Add a bit of a Southwest feel with onions, tomato, cheese,
ground meat, salsa, and sour cream, or mix it up with veggie versions made with asparagus, broccoli, spinach, bell peppers, and more.
Orange Sauce
Ingredients:
1 cup white sugar
1/2 cup butter or nondairy margarine
1/2 cup light corn syrup
1/2 cup frozen orange juice concentrate, thawed
Directions:
Combine sugar, butter, corn syrup and orange juice concentrate in a medium saucepan over medium heat. Bring to a boil, reduce heat and simmer 5 minutes
more. Serve.
Chocolate Sauce
Ingredients:
2 1/4 (1 oz) squares bittersweet chocolate or nondairy chocolate
1/4 cup nondairy margarine or butter
2/3 cups nondairy milk* or nonfat evaporated milk
*if using nondairy milk use cornstarch or Tapioca Flour to help thicken
sauce
1 1/3 cups confectioner’s sugar
Directions:
In a small saucepan, melt the chocolate, butter, milk, and confectioners' sugar together until the mixture is a little thick. Serve warm. Makes 8 servings.
Hollandaise Sauce
Ingredients:
4 egg yolks
3 1/2 tablespoons lemon juice
1 pinch ground white pepper
1/8 teaspoon gluten free Worcestershire sauce (such as Lea & Perrins)
1 tablespoon water
1 cup nondairy margarine, melted
1/4 tsp salt
Directions:
Fill the bottom of a double boiler part-way with water. Make sure that water does not touch the top pan. Bring water to a gentle simmer. In the top of the
double boiler, whisk together egg yolks, lemon juice, white pepper, Worcestershire sauce, and 1 tablespoon water. Add the melted margarine to egg yolk
mixture 1 or 2 tablespoons at a time while whisking yolks constantly. If hollandaise begins to get too thick, add a teaspoon or two of hot water. Continue
whisking until all margarine is incorporated. Whisk in salt, then remove from heat. Place a lid on pan to keep sauce warm.
